Job Summary: We are seeking a highly skilled and passionate Pastry and Bakery Sous Chef to join our dynamic culinary team. The Pastry Sous Chef will play a pivotal role in overseeing the pastry kitchen operations, ensuring consistent quality, and assisting in menu development. The ideal candidate will have a strong background in pastry, exceptional leadership skills, and a passion for creating exquisite desserts and baked goods.
Responsibilities:
- Oversee the daily production of all pastries, desserts, and baked goods, ensuring adherence to recipes, quality standards, and presentation guidelines. Monitor and maintain consistent quality across all pastry items.
- Collaborate with the Head Pastry Chef to develop new and innovative dessert offerings, incorporating seasonal ingredients and trends while maintaining the restaurant's culinary style.
- Manage inventory levels of pastry ingredients, ensuring proper rotation, minimizing waste, and maintaining accurate records.
- Place orders for pastry ingredients and supplies, ensuring timely delivery and cost-effective purchasing. Monitor and control food costs for the pastry section, ensuring profitability while maintaining quality standards.
- Supervise and mentor pastry staff, providing guidance, training, and support to enhance their skills and knowledge. Foster a positive and collaborative work environment.
- Maintain cleanliness, organization, and efficiency in the pastry kitchen, ensuring compliance with food safety and hygiene regulations.
- Assist in planning and executing pastry menus for special events and catering orders, ensuring timely delivery and exceptional quality.
- Assist with scheduling, inventory management, and other administrative tasks as needed.
Qualifications:
- Minimum of 5 years of experience as a Junior Pastry Chef or equivalent role in a high-volume, upscale restaurant or hotel.
- Strong pastry skills, including baking, decorating, and plating. Excellent leadership, communication, and time management skills. Ability to work in a fast-paced, high-pressure environment.
- In-depth knowledge of pastry techniques, ingredients, and flavor pairings. Understanding of food safety and hygiene regulations.
- Culinary degree or equivalent professional training with a focus on pastry is preferred.
