Cluster Head Baker
A Cluster Head Baker is responsible for supervising bakery staff across multiple properties and ensuring high standards of food preparation and consistency to deliver an excellent Guest and Member experience, while assisting with food cost controls.
What will I be doing?
As a Cluster Head Baker, you will oversee and supervise the bakery operations across the assigned hotels, ensuring high quality, consistency, and efficiency. You will also be required to support food cost controls and maintain Hilton standards across all properties. Specifically, you will be responsible for performing the following tasks to the highest standards:
Ensure all bakery preparation across the cluster meets Hilton standards
Prepare and present high-quality bakery items for multiple outlets
Supervise and guide bakery staff across properties
Maintain cleanliness, organization, and compliance with hygiene standards, ensuring no cross-contamination
Oversee preparation of mis-en-place for all relevant menus across hotels
Assist in achieving positive outcomes from guest queries in a timely and efficient manner
Ensure all bakery ingredients and foodstuffs are of good quality and stored correctly
Contribute to controlling costs, improving gross profit margins, and achieving departmental and financial targets
Collaborate with other departments as needed while maintaining strong working relationships
Support Head Chefs/Sous Chefs in training bakery teams in line with company procedures
Report maintenance, hygiene, and hazard issues across properties
Ensure compliance with hotel security, fire regulations, food safety, and health and safety legislation
Promote and practice environmental awareness across bakery operations
What are we looking for?
A Cluster Head Baker serving Hilton brands is always working on behalf of our Guests and collaborating with Team Members across multiple properties. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
Minimum of 2 years’ experience as a Head Baker, Chef de Partie, or in a senior bakery role within high-volume operations
A current, valid, and relevant trade or commercial cookery qualification (proof may be required)
Strong leadership, coaching, and mentoring skills, with the ability to motivate and develop teams across properties
Excellent communication and interpersonal skills
NVQ Level 3 or equivalent certification
Basic Food Hygiene Certificate (achieved)
Previous supervisory or management experience in bakery operations
Positive attitude with the ability to work under pressure
Strong organisational skills, with the ability to work independently and collaboratively across multiple teams
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
Previous multi-property or large-scale bakery leadership experience
Intermediate Food Hygiene or higher certification
Knowledge of current bakery and food trends
Proficiency with bakery production planning and food cost control
